I am a writer, outdoor professional, plant-based nutrition advocate and chef, and a website developer. I enjoy running long distances and practicing meditation and mindfulness. My wife and I live a semi-nomadic lifestyle alternating periods of travel with taking short-term work assignments.
I have blogged about running, mindfulness, travel, and unconventional living since 2010. My writing has been published in the newsletter of the North Carolina Outward Bound School. I have also written and edited safety manuals and outdoor instructor resource handbooks for Outward Bound.
I have been associated with the North Carolina Outward Bound School for over 20 years. During this time I have served as a wilderness instructor, a program director, and the Staffing Coordinator. I also lead luxury inn-to-inn bicycle tours for Carolina Tailwinds.
Plant-based Nutrition Advocate
Since transitioning to a plant-based lifestyle, I have finished several ultra-marathons (including the Bryce Canyon 100) and improved my overall health and fitness. I served as Kitchen Manager for the Everglades City Base of North Carolina Outward Bound, preparing primarily plant-based meals for groups of up to 60 people. I enjoy sharing my cooking and my knowledge of plant-based nutrition with others and have been working on a new project called Eat Plant Simple that aims to make adopting a plant-based diet easy for anyone.
I have produced WordPress websites for Asheville TAASC (a non-profit youth leadership organization), Albergue Verde (a hostel serving pilgrims walking the Camino de Santiago in Northern Spain), and a personal coach.
